Air Fryer Frittata

An air fryer frittata that sets all the way through without going rubbery. Why 180°C (355°F) beats 200°C (390°F), and why the fillings must be dry.

Ingredients

  • 6 eggs
  • 60ml milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 small red pepper, diced
  • 4 spring onions, sliced
  • 1 handful spinach
  • 60g cheddar, grated
  • 1 tsp butter or oil, for the tin

Method

  1. Grease an 18-20cm round tin that fits in your air fryer basket with room round the edge.
  2. Whisk the eggs, milk, salt and pepper together until smooth.
  3. Stir the pepper, spring onion and spinach through the egg.
  4. Pour it into the tin, then scatter the cheese on top.
  5. Air fry at 180°C (355°F) for 12-17 minutes, until set with no wobble in the middle.
  6. Check with a knife in the centre: it should come out clean. Start checking at 12 minutes.
  7. Rest for 5 minutes in the tin before cutting into wedges.

Notes

  • 180°C (355°F), not 200°C (390°F). At 200°C (390°F) the top browns and sets long before the middle does.
  • Keep the fillings dry. Wet vegetables release water into the egg and you get a soggy, weeping frittata. Squeeze any thawed spinach hard.
  • Leave a gap round the tin. The air has to get round it to cook the edges evenly.
  • If the top is browning before the middle sets, lay a loose sheet of foil over it for the last few minutes.
  • Air fryer models vary. Treat the times as a guide, go by colour and crispness, and adjust the seasoning to your taste.

Watch it

Air fryer models vary in power and basket size, so treat the times here as a guide — go by colour and crispness rather than the clock, and adjust the seasoning and glaze to your taste.

Recipe source: Method corroborated across published air-fryer frittata recipes: Effortless Foodie, Supergolden Bakes and Liana's Kitchen. Eggs whisked with a little milk, poured over vegetables in a greased 18-20cm tin, topped with cheese and air fried at 180°C (355°F) for 12-17 minutes until set, checked with a knife in the centre. Sources stress that models and tin sizes vary, so start checking at 12 minutes.
