Ingredients

  • 2 large flour tortillas
  • 80g mature Cheddar, coarsely grated
  • 2 spring onions, finely sliced (optional)

Method

  1. Lay a tortilla flat and scatter the grated cheddar over one half, leaving a clear border of about 1cm all round. Add the spring onions if using.
  2. Fold the bare half over the cheese and press the whole thing down firmly.
  3. Lay it flat in the air fryer basket and put a small metal rack on top to hold it down.
  4. Air fry at 180°C (355°F) for 4 minutes.
  5. Flip it with a spatula and cook for another 4 minutes, until both sides are deep golden and crisp.
  6. Cut into wedges and eat straight away, while the cheese is still molten.

Notes

  • The rack on top is the whole trick. A tortilla weighs almost nothing and the fan lifts it clean off the cheese — exactly the same failure as an air fryer toastie without a cocktail stick.
  • Leave a clear border round the edge. Cheese pushed to the very edge escapes, burns onto the basket and welds the quesadilla to it.
  • No oil needed. The basket circulates air underneath, so nothing sticks, and oil just makes the tortilla greasy rather than crisp.
  • Grate the cheese yourself if you can. Pre-grated is coated in starch to stop it clumping, and it melts less smoothly.
  • Sources range from 5 to 8 minutes at 175-180°C (345-355°F). Start checking at 5 — thin tortillas colour fast.
  • Air fryer models vary. Treat the times as a guide, go by colour and crispness, and adjust the seasoning to your taste.

Watch it

Air fryer models vary in power and basket size, so treat the times here as a guide — go by colour and crispness rather than the clock, and adjust the seasoning and glaze to your taste.

Tortillas filled with grated cheese, air fried at 180°C (355°F) for about 8 minutes and flipped halfway, with no oil — the basket lets air circulate underneath so nothing sticks. Sources range from 5 to 8 minutes at 175-180°C (345-355°F). The weighted rack to stop the fan lifting the top tortilla, and the half-inch clear border to stop cheese escaping, are both from Cook it Real Good.
