Air Fryer
Air Fryer Whole Chicken
Crisp skin all over and a breast that stays juicy, in about 55 minutes. Why it goes in breast side down, when to turn it, and the rest that decides how much juice stays in the meat.
Ingredients
- 1 whole chicken, about 1.5kg
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp fine salt
- 1/4 tsp black pepper
Method
- Check the chicken actually fits in your basket with room around it before you start. This is the step people discover too late.
- Pat the whole chicken completely dry with kitchen paper, skin especially. Wet skin steams instead of crisping.
- Rub the olive oil all over the skin, then rub in the paprika, garlic powder, salt and pepper.
- Put it in the basket BREAST SIDE DOWN. The juices run into the breast while it cooks, which is what keeps it from drying out.
- Air fry at 180°C (355°F) for 30 minutes.
- Turn it breast side up with tongs and cook for another 20-25 minutes.
- Check the thickest part of the thigh, away from the bone, reads at least 75°C (165°F). If it is not there, give it another 5 minutes and check again.
- Rest it for 20 minutes before carving. This is not optional — carve it straight away and the juice ends up on the board instead of in the meat.
Notes
- Measure your basket first. A 1.5kg bird needs a 5L air fryer at minimum, and anything much bigger will not fit at all.
- Sources disagree on preheating: Effortless Foodie preheat, Recipe This say not to because it browns the outside too fast. Follow whichever your own model handles better.
- Breast side down for the first half is the whole trick. Cook it breast-up throughout and the breast dries out before the thighs are done.
- Time follows weight, not the clock: roughly 35 minutes per kilo plus 10, then check the temperature. Start checking at 45 minutes.
- The 20-minute rest matters more here than on any other recipe on this site. A whole bird holds a lot of juice and it needs time to settle back into the meat.
- Air fryer models vary. Treat the times as a guide, go by colour and crispness, and adjust the seasoning to your taste.
Watch it
Air fryer models vary in power and basket size, so treat the times here as a guide — go by colour and crispness rather than the clock, and adjust the seasoning and glaze to your taste.
Recipe source: Method corroborated across published UK air-fryer recipes: Effortless Foodie (effortlessfoodie.com) and Recipe This (recipethis.com). A 1.5kg chicken, patted dry, rubbed with oil and seasoning, cooked at 180°C (355°F) breast-side down first and then turned — Effortless Foodie specify 30 minutes down then 20-25 up and a 20-minute rest; Recipe This specify 25 down then 20 up. The two disagree on preheating, which is why the method here says to follow your own model. Both agree on 180°C (355°F), on starting breast-side down to keep the breast moist, and on checking 75°C (165°F) at the thigh rather than trusting the clock.
