Crispy Air Fryer Chicken Thighs
Bone-in thighs with crackling skin in 20 minutes. The drying step, the oil and paprika rub, and the skin-side-down-first order that renders the fat before the skin crisps.
Ingredients
- 4 bone-in, skin-on chicken thighs (about 1kg)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Method
- Pat the thighs completely dry with kitchen paper, skin side especially. Wet skin steams instead of crisping.
- Rub with the olive oil, then the paprika, garlic powder, onion powder, salt and pepper, working it into the skin.
- Lay them skin side down in the air fryer basket in a single layer, with space between them.
- Air fry at 200°C (390°F) for 10 minutes.
- Turn them skin side up and cook for another 8-10 minutes, until the skin is deep golden and crisp.
- Check the thickest part, away from the bone, reads at least 75°C (165°F). Rest for 5 minutes before serving.
Notes
- Bone-in and skin-on. Boneless skinless thighs cook in about 12-14 minutes and will never crisp the same way.
- Patting dry is the step people skip and it is the one that decides whether the skin crisps at all.
- For a drier, crisper skin, add 1 tbsp of cornflour to the spice rub. It is the same principle as baking powder on wings.
- Space between them. A crowded basket steams the skin instead of crisping it.
- 75°C (165°F) is the UK food standard for poultry. Thighs are forgiving above it, and many cooks take them to 80-85°C (175-185°F) for a softer texture as the connective tissue breaks down.
- Air fryer models vary. Treat the times as a guide, go by colour and crispness, and adjust the seasoning to your taste.
Watch it
Air fryer models vary in power and basket size, so treat the times here as a guide — go by colour and crispness rather than the clock, and adjust the seasoning and glaze to your taste.
Recipe source: Method corroborated across published air-fryer chicken thigh recipes: Budget Bytes (budgetbytes.com) and Food Banjo (foodbanjo.com), with the same 200°C (390°F)/20-minute window reported across several others. Both pat the skin dry, rub with oil and dry spices, cook at 200°C (390°F) for around 20 minutes total with one flip, and probe to at least 75°C (165°F). They differ on flip order - Food Banjo starts skin side down for 10 minutes then flips, Budget Bytes starts skin side up - so skin-side-down-first is used here because it renders fat out of the skin before it crisps. The cornflour in the rub is Budget Bytes' addition and is given as optional in the notes.
