Air Fryer Gammon Steak

Juicy gammon in 10 minutes that lies flat instead of curling. Why you snip the fat first, and why it needs no seasoning at all.

Ingredients

  • 2 gammon steaks
  • 1/2 tsp vegetable oil

Method

  1. Pat the gammon steaks dry with kitchen paper.
  2. Using scissors, cut short notches through the rim of fat around the edge of each steak, roughly 2cm apart. This is what stops them curling up in the heat.
  3. Brush both sides of each steak with a thin film of oil.
  4. Lay them flat in the air fryer basket, side by side and not overlapping.
  5. Air fry at 200°C (390°F) for 5 minutes.
  6. Turn them and cook for another 5 minutes.
  7. Check the thickest part reads at least 70°C (160°F). A thick steak can need up to 15 minutes in total.

Notes

  • Snipping the fat is the whole point. Gammon has a band of fat round the outside that tightens as it cooks and pulls the steak into a bowl shape — the middle then lifts away from the basket and cooks unevenly.
  • Timing follows thickness, not the clock. Thin steaks are done in 8 minutes, thick ones can need 15. Go by the thermometer: 70°C (160°F) for well done.
  • Gammon is already cured and salty. It needs no seasoning at all — and adding salt makes it unpleasant.
  • Do not overlap them. Two steaks side by side cook properly; two stacked steam each other.
  • If yours is very salty, soak it in cold water for an hour before cooking and pat it dry again.
  • Air fryer models vary. Treat the times as a guide, go by colour and crispness, and adjust the seasoning to your taste.

Watch it

Air fryer models vary in power and basket size, so treat the times here as a guide — go by colour and crispness rather than the clock, and adjust the seasoning and glaze to your taste.

Recipe source: Method corroborated across published UK air-fryer recipes: Feast Glorious Feast (feastgloriousfeast.com), Air Fryer UK (airfryeruk.com) and Recipe This (recipethis.com). Gammon steaks dried, the fat cut through at roughly 2cm intervals to stop them curling, brushed with about a quarter teaspoon of oil and air fried at 180-200°C (355-390°F). Feast Glorious Feast specify 15 minutes at 200°C (390°F) for a thick steak; Air Fryer UK and Recipe This quote 8-10 minutes turning halfway — the gap is thickness, which is why this gives a range and a temperature to check rather than a fixed time.
