Air Fryer Pork Ribs
Sticky, tender ribs that pull off the bone. Why they go in wrapped in foil, why the glaze waits until the end, and why ribs want 90°C (195°F) inside when a pork chop wants 63.
Ingredients
- 1 rack of baby back pork ribs (about 700g)
- 2 tbsp dry rub (smoked paprika, brown sugar, garlic powder, salt and pepper)
- 4 tbsp barbecue sauce
Method
- Turn the rack bone-side up and peel the thin silvery membrane off the back. Work a fingertip under one end and pull — it should come away in one sheet.
- Rub the dry rub into both sides of the rack.
- Wrap the rack tightly in foil, sealing the edges so no steam escapes.
- Air fry the foil parcel at 190°C (375°F) for 30 minutes.
- Open the foil. The meat should have shrunk back from the ends of the bones and read around 88-93°C (190-200°F) inside.
- Brush generously with barbecue sauce and cook unwrapped for a further 10 minutes, until the glaze is sticky and caramelised.
Notes
- The membrane has to come off. It does not soften, it does not render, and left on it stops the rub getting into the meat and turns leathery.
- Ribs want 88-93°C (190-200°F) inside — roughly thirty degrees hotter than a pork chop. Different cut, different goal: the chop is about not overcooking, the ribs are about cooking long enough for the collagen to break down.
- The foil is doing the work. It traps steam and effectively braises the rack; without it the outside dries out long before the inside is tender.
- Glaze goes on at the END. Barbecue sauce is full of sugar and will burn black over thirty minutes.
- 30 minutes wrapped gives ribs with a bit of bite. Go to 40 if you want them falling off the bone.
- Air fryer models vary. Treat the times as a guide, go by colour and crispness, and adjust the seasoning to your taste.
Watch it
Air fryer models vary in power and basket size, so treat the times here as a guide — go by colour and crispness rather than the clock, and adjust the seasoning and glaze to your taste.
Recipe source: Method corroborated across published air-fryer recipes: Feast Glorious Feast (feastgloriousfeast.com), A Spicy Perspective and The Country Cook. Ribs rubbed, wrapped tightly in foil and air fried at around 190°C (375°F) for 25-30 minutes, then unwrapped, glazed with barbecue sauce and given a further 10 minutes to set the glaze. Sources differ on the wrapped phase — 25 minutes for ribs with bite, 35-40 for fall-off-the-bone — which is a texture choice rather than a disagreement. All target an internal temperature of around 88-93°C (190-200°F), far above the 63°C (145°F) used for a pork chop, because the collagen has to break down before the meat pulls from the bone.
