Air Fryer
Air Fryer Sausage Rolls
Flaky sausage rolls in twelve minutes. Room-temperature pastry, a proper crimp, an egg wash for the bakery shine, and space in the basket so they crisp instead of steaming.
Ingredients
- 320g ready-rolled puff pastry (1 sheet)
- 400g sausagemeat, or 6 good sausages with the skins removed
- 1 tsp dried sage
- 1/2 tsp ground black pepper
- 1 egg, beaten
Method
- Take the pastry out of the fridge 20 minutes before you use it. Cold pastry cracks when you unroll it.
- Mix the sausagemeat with the sage and black pepper.
- Unroll the pastry and cut it lengthways into two long strips.
- Lay a line of sausagemeat down the middle of each strip. Brush one long edge with beaten egg, fold the pastry over and press to seal, then crimp along the edge with a fork.
- Cut each strip into four, snip two small slits in the top of each and brush all over with beaten egg.
- Air fry at 200°C (390°F) for 12 minutes, in a single layer with space between them, until deep golden and puffed. The centre should read 75°C (165°F).
- Rest for 5 minutes before eating. The filling comes out molten.
Notes
- Let the pastry come up to room temperature first. Straight from the fridge it cracks along the fold instead of rolling.
- Space between them. Sausage rolls that touch steam each other and the sides stay pale and soft.
- Egg wash is what gives the bakery shine. Milk works and is what Curly's Cooking uses, but the colour comes out paler.
- 190°C (375°F) for 13 minutes also works, and is worth using if your air fryer runs hot and the pastry is colouring before the middle is done.
- Rest them properly. Straight out of the basket the filling is molten and the pastry has not set.
- Air fryer models vary. Treat the times as a guide, go by colour and crispness, and adjust the seasoning to your taste.
Watch it
Air fryer models vary in power and basket size, so treat the times here as a guide — go by colour and crispness rather than the clock, and adjust the seasoning and glaze to your taste.
Recipe source: Method corroborated across published UK air-fryer sausage roll recipes: Effortless Foodie (effortlessfoodie.com) and Curly's Cooking (curlyscooking.co.uk). Both use a sheet of ready-rolled puff pastry and sausagemeat, seal and crimp the long edge, snip the tops, wash the pastry and air fry in a single layer with the rolls not touching. They differ on temperature and time - Effortless Foodie uses 200°C (390°F) for 10-12 minutes, Curly's Cooking 190°C (375°F) for 13 - so 200°C (390°F) for 12 minutes is used here and the slower setting is given in the notes. Effortless Foodie also checks the centre reaches 75°C (165°F), which is the UK food standard for pork.
